Most people will add weight each succesive set, with the first couple sets stoping at about 4-5 reps short of failure.
And gaining mass without losing definition? Well, just how MASSIVE are you? Even as massive as Ronnie Coleman is he still has a great deal more definition than I, you, or Linchu. Definition is a matter of bodyfat and sub-q water.
